Hospitality
Hospitality students study over a two period and are enrolled in the Certificate II in Hospitality (Kitchen Operations) which is currently under auspice by Gotafe. It has a heavy focus on practical skills, both in the kitchen, and also ‘front of house’. It can be undertaken as a VCE VET or VCAL subject.
At the completion of the course, students will receive a certificate which is recognised both nationally and internationally and includes many units which can be fast-tracked into other areas of tertiary, vocational and further education. The qualification can provide direct access to a range of potential careers, in the provision of training and skill development in areas such as food and beverage, food technology, nutrition, safe work practices and effective communication. It can also endow invaluable life skills to the ‘school-leaver’.
The hospitality trainer, Lynne Ferguson, is also a qualified chef and a passionate ‘foodie’ with over twenty-five years’ experience in the Hospitality Industry. Lynne has travelled extensively and is extremely knowledgeable in international cuisines.
Lynne is a strong believer in limiting ‘food miles’ (using local produce wherever possible) and the students undertake a ’paddock to plate’ excursion every year, visiting and learning from our local growers and producers.
Opportunities are also presented to our students in the way of culinary cooking competitions, on-site visits to other venues, visiting chefs and speakers, and options to work with the younger members of the college community as cooking mentors.
